Even in New York, there are a lot of very attractive girls pedaling around. That just happens to be one of the nice sights in our city, seeing a young woman on a bike.

I want you to feel happy and enjoy the theatre of my life the way that I do. No matter what happens with my music and wherever I go – that heart of that glamorous girl in New York will never be gone.

Those people in New York are not gonna change me none.

When you’re a chef, you graze. You never get a chance to sit down and eat. They don’t actually sit down and eat before you cook. So when I finish work, the first thing I’ll do, and especially when I’m in New York, I’ll go for a run. And I’ll run 10 or 15k on my – and I run to gain my appetite.

‚Kitchen Confidential‘ wasn’t a cautionary or an expose. I wrote it as an entertainment for New York tri-state area line cooks and restaurant lifers, basically; I had no expectation that it would move as far west as Philadelphia.

I like the city. I like the concrete. I like big business. I like being a CEO of my own company and having a lot of responsibilities. At the same time, when I can go off with a backpack or off on a surfboard or even off on a run somewhere in the woods – that’s where I’m really happy.

I cycled when I was at high school, then reconnected with bikes in New York in the late ’70s. It was a good way of getting around the clubs and galleries of the Lower East Side and Soho.

I love to see a young girl go out and grab the world by the lapels.

I have more friends in New York than Paris.
